Mushroom and Bean Quesadilla

Ingredients
- 6pcs (270grm)- Cornitos Tortilla Wrap
- 1cup Onion diced
- 1 cup Mushroom diced
- 100gm- Bean ( soaked overnight)
- 1 cup Tomato diced
- 50gm- Sweet corn boiled
- 3tbsp- Olive oil
- Salt & pepper as per taste
- 50gm- Mozzarella cheese
- 7-8 tbsp- Sour Cream
Method
- Wash and soak the red kidney beans or rajma overnight. In the morning give it a good rinse and pressure cook it for 3 whistles and keep aside
- Get prepared with all the ingredients and heat oil in a Shallow frying pan on a medium heat, add veggies sauté it for 3-4min
- Microwave cornitos tortilla wrap for 10sec, spread the veggies in between the wrap, sprinkle cheese along with seasoning brush oil on other side of tortilla
- In a frying pan place the quesadilla’s for 6-7min on low heat until the cheese melts,
- Cut into triangular pieces, Serve it with sour cream.
